LIT Welcome Adare Manor Chefs
We were delighted to find a temporary home for the Adare Manor chefs in our student restaurant during the summer months as they worked on exploring new dishes while construction work took place on the newly refurbished Adare Manor. The time spent in our kitchens allowed the group of highly experienced chefs to move onto the next phase of their menu development.
LIT offered a warm welcome to Director of Culinary Loughlin Druhan, The Oak Room Chef de Cuisine Michael Tweedie, The Carriage House Chef de Cuisine Neils Van Oers, Banqueting Chef de Cuisine David McKane and Executive Pastry Chef Xavier Torne as they worked on the new menus, which all have a heavy focus on local Irish produce.

After an adventurous culinary road trip to encounter artisan ingredients from dozens of independent producers, farmers, and fishermen across Ireland, the team spent several weeks in the Taste kitchens incorporating their findings and perfecting new dishes for all of Adare Manor's exciting new dining venues.
From November 2017 guests at Adare Manor will have the opportunity to taste the fruits of their labour: fine dining at The Oak Room Restaurant, sumptuous Afternoon Tea in The Gallery, and favourites from the grill at the preview pop-up restaurant, The Carriage House in Adare Manor. We wish the entire culinary team at Adare Manor the very best of luck in their future endeavours.
